For Mother's Day, my friends and I cook up a nice, multi-course dinner for our wives every year, and this year I made Clam Shio Ramen.
- Littleneck clam dashi 200g, tori chintan 100g
- 30g Shio/shoyu tare from the ramen_lord book. I didn't have shiro shoyu so I just used usukuchi shoyu
- Noodles were 36% hydration, 1g salt, 0.7g potassium carbonate, 0.5g sodium carbonate. 135g serving
- 15g Chiyu cooked with garlic and scallions
- Toppings were chashu, clams, ajitama, scallions, menma, nori, and about 5g of truffle sauce. It's enough truffle to smell and taste it but not overpower the clam
