    ā–¢ 2Ā cupsĀ all-purpose flour (or gluten free flour)

    ā–¢ 1 ½ tsp cinnamon

    ā–¢ 1Ā tspĀ baking soda

    ā–¢ 1Ā tspĀ salt

    ā–¢ 1Ā cupĀ (2 sticks) vegan butter, softened

    ā–¢ 1Ā cupĀ white sugar

    ā–¢ 1Ā cupĀ brown sugar, packed

    ā–¢ 2Ā flax eggs

    ā–¢ 1Ā tspĀ vanilla extract

    ā–¢ 3Ā cupsĀ old fashion oats (or gluten free rolled oats)

    ā–¢ 2 cups green apples, diced

    ā–¢ 1/3 cup vegan salted caramel

    1.Preheat oven to 350°F. Parchment line two baking trays.

    2.In a mixing bowl, add all dry ingredients (flour, cinnamon, baking soda, salt). Mix to combine.

    3.In another bowl, add butter and both sugar. Beat until light and fluffy. Add flax eggs and vanilla, beat until just combined. Add dry mixture and beat until combined again.

    4.Add oats, using a wooden spoon, incorporate. Add diced apples and fold in. Scoop onto baking trays. Using a squeeze bottle, squeeze salted caramel into cookies in different spots.

    5.Bake for 20-22 mins or until golden brown. Let cool and serve. Optionally, squeeze more caramel on cookies then serve.
