I can’t believe it’s taken me over 5 years to show you how to make your own sour starter here are the things you’re going to need a clean jar flour and some water add equal parts flour and water mix well then place the jar somewhere warm for 2 days now on day three there should be a slightly sweet Aroma kind of smells like yogurt discard half the starter add equal parts flour water mix everything together then clean the sides of the jar cover with the lid and leave it overnight night night it’s day four and our sard sarter has grown overnight you can see a little bit of the progress here and if you take the lid off you will see some bubbles on top you’re almost there now all you need to do is repeat the same steps from day three discard and feed again for day five congratulations you now have an active sourdough starter look at that this is ready to go start making your bread right away or you can place this in the fridge and feed it later on

You don't need to discard anything, it's wasteful and unnecessary. Just feed equal parts flour & water once a week and keep in the fridge, or use the scrapings method
Now keep doing that for the rest of eternity and you can eat your sourdough

You can use the discards to make flatbread.
Huh the method i learned was make a yeast bread recipe like puzza dough and keep some in a jar feeding it every other day.
