Prepped up some chipotle beef and potatoes with some pico de gallo and chipotle mayo.

Recipe from Chef Jack Ovens (legit the only source I’ve used for meal prep for the past 2 years 😂)

For this I used 1kg of lean beef mince, 900g of diced spud lite potatoes, tomato, onion, coriander (cilantro), lime, chipotle in adobo sauce, onion powder, garlic powder, smoked paprika, dried oregano and ground cumin, mustard and mayonnaise.

Potatoes are diced and seasoned with 2 teaspoons of the herbs and spices and 1 teaspoon of the cumin. These were just airfried at 190C for 25 mins although I did have to give them another 5 mins at 200C to properly cook through.

For the beef this was just pan seared and browned off. Added in 1 and 1/2 teaspoons of the herbs and spices and 100 grams of chipotle in adobo sauce and mixed to combine.

For the pico de gallo I diced up one red onion, 3 tomatoes, roughly chopped the coriander leaves and squeezed in 1/2 a limes juice and added salt and pepper. Normally I would add diced jalapeño but unfortunately did not have any on hand.

For the chipotle mayo I kind of eyeballed it so don’t have exact measurements but added in mayonnaise, a little bit of American mustard, chipotle in adobo sauce and a little bit of salt and pepper.

This was nice and easy to throw together and super tasty, highly recommend giving this a go if you like this sort of thing 😁
