Here to piss you all off again, I’m sure. Lol. I made steel cuts oats using Italian technique for risotto. Came out absolutely delicious. Steel cut oats, extra virgin olive oil, a little tomato , clove of garlic, Calabrian chili, vegetable broth, bit of parmigiano. Finished with cracked black pepper , drizzle of olive oil.

Sound good but it’s a soup more than risotto. I will try it.
We actually use many cereals for variotions on risotto. “Orzotto” is one of the most frequent (orzo is barley), and also farrotto (farro is spelt). I’ve also seen a “patatotto” (with potatoes) from chef Gabriele Lenti once

It’s not really that odd, although your looks a little bit too runny and it might be overcooked ! I would say it looks more like a zuppa than a risotto (a thick one). It still looks delish !
