Made this for my fiancées birthday today. Paired with a blackcurrant sauce,creamy cider cabbage and leeks and roasties (cos they’re his fave lol)

    Venison is easily one of the best red meats around!! You will be hard pressed to find anything more tenderly and flavorful than a think back strap from a 2-3 year old doe. Looks delicious!

    For the love of God stop pre-slicing your meat like you’re serving a toddler. Serve people whole steaks and give them a knife to cut it themselves.

    All that juice that you’re leaving behind in the serving dish or on the cutting board is wasted.

    Is there such a thing as a marbled venison cut? Just curious.

    We live in deer country and a neighbor of ours used to put out BIG trays of apples from his apple tree and it would attract a lot of deer. I feel like maybe I knew what he was really up to but I never saw any “fat” deer.

    Oh that sounds amazing!!! So I have ate venison for my entire life, big family of hunters. The very best venison steak I have ever had was at a fancy restaurant in Chicago that had one of those top chef contestants, runner up I believe(girlfriend at the time was into the show, her birthday choice). He prepared this piece of meat so well, complemented it with a tart pair in a way that blew my mind. I have always known citrus/apple/sour/tart goes well with venison but this guy did it so well. With that being said, your dish sounds amazing! That cider touch probably offered an amazing combo, I usually add ACV among other things to my venison burger when making patties. Cheers
