My family usually gets striploin but I saw a local store had ribeye on sale and figured I'd finally give it a try. It is said to be "Ungraded". It was actually quite dry with very little liquids coming out as I cut it into steaks. How do they look?

    I always try to get the biggest piece of cap on a Ribeye….my favorite type of steak and I’m sure many other’s favorite

    looks good. i would remove that fat and tie up with string so you don’t flare up

  4. I expected someone to say this before I got here. The ribeye is a fantastic cut, but you always want to find them with that fatty layer you see from the upper-left to the lower-right as thin as possible. This one is not terrible at all, but I expect that the upper-right and lower-right sections will separate as that fat layer renders during cooking. Because the rest of the cut is so well-marbled, I don’t think the flavor will be affected. In effect, you maybe paid ~8-10 percent extra for fat content you won’t eat. I’d eat it!

    Very good looking meat… don’t judge by the leaking liquids… dry aged meat doesn’t “leak”. Not saying it is but sometimes too much clear liquid means meat has not been frozen in the best conditions

  9. The spinalis cap is an odd shape, but overall the marbling looks nice, should cook up nice

    They look delicious and I prefer ribeye over sirloin, it has more flavor imo.

  11. It’s a 👍. The steak is cold, so it shows off the marbling better. This is possibly “middle to upper choice”, the spinalis is odd shaped… but all that said, they should not be dry unless you over-cooked them.
