This is at my Costco in Naples Fl. They had the whole ribeyes a couple weeks ago for $60/lb and these when I stopped today. Depending on how this goes tonight maybe I’ll grab some more tomorrow and vac them into the freezer. Otherwise never seen it for under $100 before

I get their Wagyu Tritip every few months. It let it sit on smoldering lump hardwood at 200 for 20 minutes to an hour, remove it from the grill to get it screaming hot then sear it. Absolutely phenomenal.

never seen them sell cuts this small, I’d totally get one
with the high fat content you really just want to cut it into small cubes and give them a good sear. not too high heat as you want the fat to render a bit. hard to mess up tbh

Pro tip!! Don’t grill as a typical US steak! Do it like you are in Tokyo…look up Youtube for videos, I’d cut bite-size thickness and slices, can be longer, and grill each slice custom! This is the way. Let us know how it went.

Eat way less of it than you’d think you should. Like 1/4 lb of it for an adult can be too much.

This is wild! My costco sells these at $60 per pound and only sells them in giant $400 portions, never just one steak. Given how rich and heavy these are, there’s absolutely no way we could eat that much and I’m not letting this go to waste.
If my costco sold them in portions like this, at THIS price? I’d absolutely splurge on some, divide that into 3 steaks, and have a fantastic week lol.

It’s really not that bad making them, but they do cook super fast because of all the fat.
Pat it dry, then brine it for 24 hours, then reverse reverse it. I like to do 250f in my oven, and it took me 20 minutes to reach 110f in my steaks. Rest it for 30 minutes, then sear it on super high heat in a cast iron, or grill until 125f, then rest it for 10 minutes.

You lucky bastard. I bought my parents a 3.5 pound a5 ribeye roast a couple years ago for $350 and that was a bargain.
