I had some radicchio to use up from our dish the other day; so I braised it down with some sautéed Italian sausage, shallot, garlic, wine and a touch of chilli, reserved some for garnish, and served it with some homemade Garganelli.
The dish is finished with a bit of basil, some good extra virgin olive oil and Parmigiano-Reggiano.
Pretty much everything is leftovers, pantry stuff or from the freezer, including the pasta dough.
