excuse my stupid questions
so i recently started a food truck job and it’s my first real restaurant/food job. i know some things can be thrown under a rug or theres shady practice but seriously. summer’s comin on strong and the heat is so bad it’s got us all slumped over and groggy next to the huge grill. there’s a single fan in the corner that we managed to get but it’s end is coming soon as it’s starting to drip with grease from all angles. as for the vents, no one really does anything about it and i’m thinking if it’s worth reporting. the only vents are the open windows we serve out of but the wind’s not very good. any thoughts ?

Speaking from experience; screw the cleanliness factor, that thing will gum up completely and you will be in sweltering heat in no time. Seriously you will not have any venting and you WILL notice it.
Just do yourself a favor, take it apart completely, and give it all a deep clean before you put it back together. I just had to Go through that whole agonizing process on my buddies’ food truck. He let it get out of hand to the point where he was so overwhelmed he couldn’t do it by himself. He asked me to come take care of it and I was literally pulling chunks of greasy dust out of the fan.
A pressure washer comes in handy here by the way. Don’t let these little things build up until it’s so overwhelming you can’t handle the cleanup at the end of the season.
I use zep btw. Good degreaser
Get kerosene, a shower plastic curtain, a large garbage can (like a 32 gallon), a cheap toilet brush and a spray bottle. Tape shower curtain around vent and drape it into the trash can. Spray the shit outta the fan, scrub with toilet brush, spray, brush, spray, spray, spray. Ventilate. Get up on top of truck, spray down vent.
Don’t smoke while cleaning.
