This scallop risoto is inspired by one of my favorite drinks, a gin and tonic. Had thought for a while about making a dish inspired by the flavors of gin and tonic. And when I thought of risoto, it really came together for me. Put the lime gin and tonic into the dish as well as into my drink at the same time, which gives you the perfect about 25 minutes to finish the drink while the risoto cooks. You know the deal with risoto. Keep adding stock and stirring it. And while that’s going, we’re going to add the scallops to a super hot pan. Once they’re nicely seared, flip them over and sear them on the other side. When the risoto is just about finished, add some yogurt, parmesan, and mint. Plate up the risoto with a big pile of scallops on top and garnish with cucumber, mint, and crispy shallots. And of course, serve it with a nice ginonic on the
