Worked catering for many years. 25 speed racks plus 10 football tray racks and at least 400 sheet pans. A 10″ saute pan is really just a big spoon.

I’ve used 30 at once on my station. That was doing lunches for 350 people daily, and we had seven people on our team IIRC (not all using sheet trays).

Having worked in casinos and major hotel bakeries, I’ve gone through maybe 4 or 5 of those carts in a day, maybe 9 for major events where 10k+ guests are served. My dishies have always knocked them out quick, for which I am eternally grateful.

Full size sheet pans? Maybe like 25ish. ⅛ sheet pans? Like 300🤯🤯🤯. I helped open up a joint that used these as their serveware (like 50% of places from 2015-2020). Personally I despised it, the thought of knives scraping across metal literally makes my body go in full goosebump mode. But it was trendy and what the owners wanted. That should be a restaurant equivalent of a warcrime lol.

When I worked at a convention center, we had about 150 speed racks. The room that held all our sheet and hotel pans was bigger than any house I’ve lived in.

At once? For certain events we do at the hotel/restaurant I work in, we’ll blow through almost 4 of the solid sided speed carts of just bacon (we’ll say that’s 30 pans each) so that’s 120 just on bacon and sausage, not counting anything else we do for them
