Procedure:
1. Preparation of the sponge cake:
• Start by preparing the sponge cake. Whip the eggs with the sugar until you obtain a frothy mixture. Gradually add the sifted flour and mix gently. Pour the mixture into a pan and bake at 180°C for about 25 minutes. Once cooked, let it cool.
2. Preparation of the ricotta cream:
• Take the fresh sheep’s ricotta and sieve it. Add the sugar and work the cream until it is smooth and homogeneous. Add the chocolate chips and mix well.
3. Assembling the cassata:
• Line a mold with thin slices of sponge cake, taking care to line the sides too. Pour the ricotta cream inside and level with a spatula. Close with other slices of sponge cake. Place in the refrigerator for at least 3-4 hours to compact the cake.
4. Preparation of the icing:
• Make a glaze by mixing icing sugar with warm water until smooth. Remove the cassata from the mold and cover the cake with the icing.
5. Decoration and presentation:
• Once the icing has solidified, add the candied fruit to the surface of the cake according to Sicilian tradition. Place the cassata in the refrigerator for another hour before serving.
