Any hints about the sizing of chicken/meat to cook SKEWERS with vegetables? I want them to be cooked at the same time, same stick. I think I can play with the sizing, and achieve a good result.

No, proteins and veg probably won’t be done cooking at the same time since proteins usually take longer to cook than veg. If I were doing skewers I would just make some skewers all meat and some all veg. Throw the meat ones on first and about halfway through throw the veg ones on. That way everything is done around the same time. Put everything on a platter and voila!

Cut the protein a little thinner and put the smooth backs of things like tomatoes and capsicum to the protein.
