Hi y’all. This is Maddie from Maddy’s Kitchen and today I’ll be making you all a meatball sub. And here’s the things I’ll be using. I’ll be using about 80% of ground beef, uh 80% lean and 20% fat. And here’s a whole a half a cup of milk. And here’s some crushed tomatoes. I’ll be using salt. tomato sauce, parmesan cheese. I’ll be using lranco, garlic, and also here’s the bread that uh I got from Publix for this for the sub. I have mozzarella cheese. I have proolone cheese. I have two eggs, basil, oregano, this salt and pepper mix. I have some butter, uh garlic, onion, and parsley. These a lot of ingredients. And as I uh start the procedure, I name the ingredients again. Okay, the first thing you going to do, this is about 2 lbs of ground beef. Like I said, 8020. The first thing you going to do, you’re going to break up your ground beef. And here’s the things I’ll be adding. First, I’ll be adding for uh half a half cup of milk. I’ll be salt and pepper mix, two eggs, a half a cup of panko seasoning, uh some garlic powder, uh parmesan cheese will be a half a cup. I have fresh uh uh garlic. I have fresh uh basil, onion, and uh parsley. And these are things that’ll be going in here. So, the first thing I’mma do, I’m going spread my uh my vegetables. And this how I do mine. I take and these are garlic, fresh garlic. These are elephant garlic. And they are so strong. I go all across mine. It’s a four a cup. That’s up, you know, if you want to use, but I just go around mine. And uh that’s how I season mine. I know if I go all around it, it works for me and it probably work for you, too. If you just go around and you have enough, that’s always worked for me. That’s my garlic. And here’s my onions. Fresh onion. I mean, these things going in there. Don’t put too you don’t put overpower it too much cuz you’ll be seasoning your sauce, too. Now, these are fresh vegetables. Here’s a little basil. It’s a little basil. Here’s a little basil. These are kind of big, but I’m going to break them up. And here’s that’s enough of that. And here’s some parsley. Little parsley going to go in these. I’m going break these up a little bit off camera. And here’s um I’m going to put um here’s my cheese. This is Parmesan cheese. All these things go in the meatball cuz you want these meatballs to taste good when you you want them to taste good cuz a sub, you know, a sub is a good meal. Okay, I’m going to add my Parmesan cheese to it. It’s a four a cup, but I just, like I say, I go around it, but the measurement is a four a cup cuz the parmesan cheese that makes it taste good, too. I’m going to put although I put a little uh some fresh garlic in. I’m going to put a little pot of garlic, too. Just a little bit cuz you want the meatballs to be popping. Okay. Now, here’s some pranko. That helps to stick together. Put a little bit over there. Now, you know this gonna be seasoned good, y’all. Okay. And then I’mma bust my eggs. Egg go in too. I should have beat them up. Make sure y’all beat your eggs up before you put them in. The egg. Two eggs. Then now this is salt and pepper mixed together. I should have put it in at first, but that’s okay. This is salt and pepper blend. And a cup of this milk of half a cup of milk should go on. Now, these all the ingredients I’m putting I’ll be putting in here. Now, I’mma mix this well and get ready to form my meatballs. You have to mix it well because you want all these ingredients to come in. And when you look at it, if you don’t have think you have enough, add a little bit more in there. Cuz like I said, you can also taste your meat, you know. I know when I was in Germany, they eat they ate raw hamburger meat. I mean, but some people do. They say it’s okay. So, you can taste your meat and make sure it’s seasoned. You know, I never taste mine cuz I don’t think I can eat raw hamburger meat. But I’m going to mix this well and get ready to shape my meatballs. Okay, I’m shaping my meatballs. bad. Start shaping some of them. You know, just get them a shape. Oh, you can make them big, you can make them little. That’s up to you how you want them. As long as they taste good. That’s the key. Not the shape of them, how they taste. But you want to look good, too. So, I don’t want to make them too bad. Some of those are big and some of them are small cuz I’m going to make probably I’m going to make some miniature ones, not a whole sub. I’m going to cut some of them half the bread half. So, it’ll be a small one. I’m going to shape all of these and I’m going to get back with you. Okay, I shaped all my meatballs. I got about 15 of them. I’m going to fry them. And you want the skillet hot so they can sear. You want to put it on high. All you want to do is brown on the You want the outside getting hot. Okay, that’s not hot enough. But you want them hot so they can sear. I finished shaping these. Well, it’s getting hot. You just want them to sear, not cook all the way cuz they going to cook in the sauce and it you want the sauce to go through the meat and flavor it real good. Let these sear about two minutes on each side. You don’t want them to get too black and ugly. And I’m going to get that put all these in here. Once they once they um brown on one side, I’m going to turn them over and I’m going to get ready to make my sauce. And then they’ll be finished. Put them in the oven. Let the cheese melt on it. The mozzarella and the parmesan cheese that I’ll be putting on it. Not the Parmesan, I’m sorry. Uh mozzarella and proolone. Those are the type of cheese I use. You can use any type of cheese now. That’s up to you. You can use American cheddar probably. That’s up to you what you prefer to go on top of your uh on your sub. It’s your preference. When you go to Saltway, they get they ask you your cheese that you want to eat. Now, these are kind of big. So, I like a lot of meat. I don’t like for mine to be little. If you don’t want yours this big, don’t. As long as they put the uh fitting between that bread, you’re good to go. Okay, I’m going to let these fry. Make sure you have a nonstick ski. Give them a little shake. Let them fry good. And then you turn them over. It smells so good. I’m going turn them over when they get to cooking. Okay. Okay, I’m getting ready my uh meatballs seared a little bit. I said this was 8020. This much was 93 because these uh meatballs didn’t shrink that much, but that’s okay. You know, the better the more lean, the better it is. I’ll be putting some crushed tomatoes in here. In my sauce, I’ll be using tomato sauce. And I forgot to mention sugar. A little sugar. Anytime you use uh uh tomato sauce, the sugar is necessary. Okay. I got some uh oregano. I got um I mean bay, I’m sorry. Uh and I have parsley. I have onions and and garlic. And I have butter. I’ll be put searing my vegetable with this butter. Put a little butter in here so it won’t burn with with the oil. You use the same skillet that you cook the uh that you cook the uh meatballs in. Don’t change your skillet cuz you want that little Take some of this. I don’t want but a little butter to cover this skillet. I’m going to put my vegetables in here. Okay. Just want a little. And you when you put your vegetables in, you wait till the you know when it start bubbling up. So, I’ll be putting my garlic in there. This to make it sauce. Cut it up a little bit cuz I didn’t want my butter to burn. I got my uh um garlic. And here’s my fresh onion. Almost the same thing that you use in the meatballs. is just to season the sauce. These are onions and some oregano. They’re kind of big. They’ll chop up. They’re just in case. And here’s some parsley. Your parsley put in there. Been chopped a little bit. That’s up to you. So, I’m put let this sear and let these cook and pour my sauce in. Put my meatballs in it and it’ll be good to go. Be ready to go. Put them in the oven. Have your when your meatball cook um the sauce cook a little bit with your meatballs, cut your oven on and go have it for a boil and let these seriously. That looks so good to make sure you have some salt and pepper around for the u these once these brown the onion get golden which they are. Put my sauce in here. crushed tomatoes and sauce. Okay, I’m getting ready. I’m going get back with you when I get ready to put my meat sauce in. The first thing I’mma put is my crushed tomatoes. That’s what it say. I don’t see these look like no crushed tomatoes to me. That’s what they said is. And here’s my sauce. Put some tomato sauce in here. I just want enough to cover these meatballs. This smells so good, y’all. I’m going put my meatballs in here. I’m put a little sugar in here in the sauce. So, I’ve been tone it down. And here’s some salt and pepper. I’m going set my meatballs in here. Oh, this smells good, y’all. And let this cook for about 25 minutes until the meatballs cook in the middle. You know, because they weren’t all the way done. Make sure the sauce and you don’t want your sauce too thick on a uh on a meatball. You know, it got to be kind of, you know, chunky a little bit. You don’t want it too, not when I say too thick, you don’t want it too loose neither. Yeah. I’m going to cover these with this. I got some more sauce over here. So, I can pour this in here. I’m going let this cook for about 25 minutes until I season until I season my meatballs and I’ll be good to go. Okay, that was tomato sauce and to and and crushed tomatoes, which I said didn’t look like the crush, but you know, got to take the word on the can. Okay, I’m going let these cook. It’s already looking good. I’m going to let it cook a little bit the until the meatballs get done and I’m going to make me some subs and get back with you. Okay. Okay, y’all. My sauce have cooked, my meatballs have cooked. I seasoned the sauce. I’ve seasoned the meatball and I’m ready to make my sandwich sub. And this how much this how thick you want your uh sauce to be. You don’t want to be runny. You don’t want to be too thick, but this good enough to sit on that sub. Okay. The first thing you do when you doing the workstation with your uh sub, your first thing you’re going to do is put some prevalant cheese on it. Put a little prevalon cheese. That’s the first thing go to the bottom. After that, you put after the prevalon cheese. I’m going to make these little miniature ones. You’re going to take and u put the meatballs in there. Then you can put your mozzarella cheese on. And that’s it. I didn’t know I was going to do this to the end. So, what I’m doing is making these little sub for people. You know, you got kids that can’t eat a whole sub, a half a sub. So, I took and cut the uh I took and cut the um cheese, the bread in two into three pieces. I got one little piece of cheese in here. And what I’m going to do now, get this arranged. I’m going to take the meatballs. I’m going to put about four meatballs on this. About four of them. See how big that is? Get them meat. fit them bonds perfect. And you going to put a little sauce on it. A little sauce when it’s still on. Just a little bit cuz you don’t want to mess up the the bread too much. That looks so good, y’all. To me, put a little sauce on it. And this this going to go in the oven. Okay. And what I’mma do I’m going do all these like that first since I got the cheese on. This going to be one. Now, these meatballs are kind of big. This going to be one meatball sub for the kids. Like I said, these meatballs are kind of big. You probably wouldn’t have them that big for the kids. But whatever you got left over, put it in noodles. Make you some noodles for it. Whatever you got left over. And y’all can make yours a little for the kids cuz this is some good meat. But I like mine I like mine kind of big. Okay. Put a little juice on it. Do that. And what I got left over, I’m going put some noodle. I’m going to cook me some noodles and put with that. I’m not going to waste it. This is so I tell you the sauce is so good. And last but not least, I always say that the cheese that go on top and this going to go into the oven. The mozzarella cheese. Mozzarella. for the cross. We’ll put it on a broiler. I got my oven pizza broiler. You going to call this a day. You going to be ready to eat this. So, this is it. Okay, we’ll put these. I want a lot of cheese. I’mma set these in the oven and call it a day. set them up kind of. You know, I might have the wrong pan for me, but that’s okay. I want this one to look good. This is my main one. Okay, I’m going put this in the oven and get back with you. I’m bro. So, put it to let it stay in the oven for about 2 minutes, but you have to check, not maybe two minutes, but check it. So, all you want to do is this cheese to melt. Okay. Thank you all for tuning in to my presentation of my meatball. So, I hope you enjoyed this presentation. If you did, share it with friends and family. Once again, thank you all for tuning to Matt’s Kitchen and have a wonderful day. [Music] [Applause] [Music]
