

Just recently made my jump from Instant Pot sous vide to the real deal and had a question. I bought a 12qt Lipavi as well as their anti float non-plated rack. I also bought a Kitchenboss Circulator. To pair all of this want to break it in with 3 Ribeyes and noticed how close to the machine they are. I could maybe make my bags a little smaller and tighter to the steaks, but wasn't sure if this was using too much room?
I just want to make sure that bags close or touching is safe and doesn't impact heating!

Looks good, but I would add water before you try cooking them.
I’ve never had an issue with plastic melting by being next to the heating element.
I thought you had you steak in the dishwasher

depending on how long youre cooking for remember to keep adding water so the appliance doesn’t turn off from the water level dropping due to evaporation.
Can’t tell if there is air in the bags, make sure you are vacuum tight. Plastic needs to be > than 200 by a good amount to melt. I throw something heavy and about 4×4 “ on top.
The water can only get up to 212F/100C. The heating element can get hotter but it’s behind the metal shroud so there is not a realistic opportunity for the plastic to melt. It might not be ideal to let the bag touch the shroud but it won’t be a problem.
It’s totally fine. The metal piece you see is a heat shield. Water is a great heat sink and you won’t get higher than set temperatures unless you’re basically touching the actual heating element, which is hidden under the heat shield.
