I saw a post about shakshouka in here and it looked delicious, but I've mentally committed to clearing out my fridge as much as I can before going to the store again so I improvised and just used ingredients I had on hand.

I only wish I had an avocado in the fridge to top it off with a few slices.

For 372 calories I'm very happy

-1 slice toasted sourdough
-2 eggs
– crushed tomato
-a teeny bit of jalapeno
-shredded carrot
-corn
-cauliflower
–white onion
-garlic

Salt, pepper, Chipotle powder

    Good idea to add the shredded veggies! One thing I do for this is add the eggs and then drizzle in some more egg white (not too much) for more protein and volume, but I eat omad so I try to get more in my meal.

    Were the veggies shred in the food processor or did you have a brand that you purchased that way?

    ngl I like more “realistic” pics of food—not ugly but not professional level looking. it makes me feel less terrible of how mine turns out when I try the recipe 😭🙏
