I have a 2 year old kid and just don’t have the time fire up the offset smoker anymore. I fixed this pellet smoker and I’m pleasantly surprised. I finally get that the connivence is worth the slight reduction in smoke flavor.

    Get a smoke tube and cold smoke stuff for an hour or two before you cook it. Helps bring back that deeper smoky flavour
