I made a Kenji-late-night-POV inspired video about how I store different ramen components in the freezer to create a great dish in only 10 minutes! Any feedback would be appreciated 🙂

  1. Can highly recommend the seriouseats ramen noodle recipe: https://www.seriouseats.com/homemade-ramen-noodles

I’m using store-bought in this video, but definitely intending to create a nice big batch ready to freeze soon.

The seriouseats recipe is quite high hydration all things considered – though 40% is roughly the minimum you can do without changing too many methods.

One thing – I’d recommend the “double bag” method (standing on the dough and kneading with your feet) instead of a mixer or by hand, as the dough hydration is so low that it’s much easier to knead this way.

Good job! I’d watch another video from you. But you asked for feedback, so:

    1. Instead of fighting to get every bit of the cold miso tare out of the Tupperware, just swish some of the hot stock around the remaining bits and dump it in.

    2. I’m not sure what happened with the air fryer chicken?

    3. Overall, your go-pro camera angle was very good, but while you started to eat we saw more of the countertop than the bowl. You’ll get there with practice. Sometimes you can see Kenji’s phone in his shot, which shows him the camera angle.

    Again, nicely done!!!
