I’ve refined my grill/fry wing recipe over the years, and figured I’d share here. It’s an art, not a science, so modify any way you want.

  1. Thaw 2.5 lbs of jumbo wings.
  2. Season with olive oil, salt, pepper, garlic, baking powder (a generous amount) and any other seasonings of your choice.
  3. Grill wings over indirect heat until they are about 110-120 F.
  4. Prepare sauce : Red Hot or Frank’s, white vinegar, Worcestershire sauce, 1/3 stick of butter. But over direct heat on the grill.
  5. Fry wings in oil for about 3 minutes.
  6. Remove from oil and put wings over direct heat to burn off excess oil.
  7. Dunk wings in the sauce and completely coat.
  8. Put them back over direct heat for a few minutes to bake the sauce on.
  9. Sever and enjoy. I add more sauce and NEVER add ranch or blue cheese.
  10. Drink one Kilt Lifter while cooking, and one more with the wings!
