I’ve refined my grill/fry wing recipe over the years, and figured I’d share here. It’s an art, not a science, so modify any way you want.
- Thaw 2.5 lbs of jumbo wings.
- Season with olive oil, salt, pepper, garlic, baking powder (a generous amount) and any other seasonings of your choice.
- Grill wings over indirect heat until they are about 110-120 F.
- Prepare sauce : Red Hot or Frank’s, white vinegar, Worcestershire sauce, 1/3 stick of butter. But over direct heat on the grill.
- Fry wings in oil for about 3 minutes.
- Remove from oil and put wings over direct heat to burn off excess oil.
- Dunk wings in the sauce and completely coat.
- Put them back over direct heat for a few minutes to bake the sauce on.
- Sever and enjoy. I add more sauce and NEVER add ranch or blue cheese.
- Drink one Kilt Lifter while cooking, and one more with the wings!
