Learn how to make the most delicious, restaurant-quality asparagus risotto in your own kitchen with this detailed tutorial. The best part? You don’t have to stand over the pot endlessly stirring and adding stock!

This classic Italian rice dish combines fresh spring asparagus with creamy arborio rice for a luxurious meal that’s surprisingly simple to prepare.

Ingredients:
1 bunch fresh asparagus, cut into thirds
2 cups arborio rice
5-6 cups vegetable or chicken broth
1 medium onion, finely diced or 1 bunch of green onions, white roots sliced
3 cloves garlic, minced
1 cup dry white wine
½ cup freshly grated Parmigiano-Reggiano cheese
Juice from ½ of a lemon
2 tablespoons butter
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
Fresh herbs for garnish (parsley, chives, or basil)

Process:
Prepare the asparagus, onion, and garlic.

In a large Dutch oven, heat the olive oil over med-high heat. Sauté the asparagus pieces for about 3-5 minutes. Remove from the Dutch oven and set aside.

Reduce the heat to medium and melt the butter. When melted, add the

Risotto and cook for about 3 minutes. Stir frequently.

Add in the onion and garlic and cook for another 2 minutes.

Add the white wine and stir well until most of it is absorbed.

Add in 5 cups of the chicken stock and stir well. Cover and cook for about 1 minutes. It’s okay if you have extra stock as you may need it later.

After 10 minutes, stir the rice. Cover and cook 6-8 minutes more.

By now, the rice should have absorbed most of the stock. Stir the rice, then add in the lemon juice and parmesan cheese. Stir well.

Taste and add salt and pepper, if needed.

If needed, add in the rest of the stock of the rice is too clumpy or the stock is completely absorbed.

Serve and top with some of the cook asparagus. Or, you can stir in all of the asparagus.

Sprinkle some fresh herbs, if desired, and enjoy!
