Starting them off after seasoning the grill yesterday with beef Tallow. Putting them on at 180 super smoke and will ramp it up to 225 after 3 hours

I’m going no wrap because I want to taste just the pure super smoke on them

On my old crusty green mountain grille I made 100s of racks of ribs and rarely did the wrap. Looking forward to seeing how they turn out in 6 hours.

    Forgot to mention the binder is Dales seasoning marinade and the rub is Meat Church Holy Gospel.
