    Center looks great but the sear could be better. Your pan wasn’t hot enough and your steak looks like it had a lot of moisture on the surface. 6.5/10 would still eat

    Love sirloin. That is a pretty weak sear, however. Great interior. You need a hotter surface.

  4. If you can, try dry brining in your fridge for a few days. Pat your steak dry, salt liberally all over (sides and all), place on a metal rack that can elevate your steak so the cold air in your fridge can touch the entire steak surface. The dry brining will draw out the moisture and in a few days, it’ll be very dry. That on a very hot pan will result in a fantastic sear/crust.

    Meh sear and a huge grey band, not hot enough pan, probably. Also not enough oil in the pan
