Mine are more ingredient-prep, then make the day of, but I’ve shopped and planned.
Breakfast: avocado toast with black beans and sliced radish
Lunch: pita bread pizzas with Alfredo base, shaved beef, sliced red onion, sliced green pepper, and mozzarella
Dinner: some kind of green chicken enchilada bake with zucchini as the base – I do mini casseroles almost every night in my air fryer. When I’m home for lunch, I pull out some frozen chicken to marinate and thaw in the fridge, then in the evening I put zucchini (chopped, noodles, boats, whatever suits the dish), some sauce, cheese if it needs it, and the raw chicken, then bake it all in the air fryer.
Will slice English cucumber and chop up a pineapple for snacks.

Just ordered from Walmart, turkey burgers and ground turkey with some spinach wraps, bell peppers, onions, tomatoes, spinach, and sweet potatoes. Gonna make some wraps for next weeks prep.

I have yet to shop, but it’ll be a version of [this rotel dip](https://www.maryswholelife.com/viral-high-protein-cottage-cheese-queso-dip-recipe/), some sort of overnight oats or my remaining breakfast sandwiches, and a snack of fruit. I’ll be eating dinner from the freezer this week (or, chicken nuggets and a salad kit)

More kolaches. I make big batches and freeze them, and thaw a few for breakfast.
I have *so many* fresh tomatoes right now. Today I am going to cook down a bunch of them into one of my favorite sauce recipes (Food Wishes Fresh Garden Tomato Sauce) and freeze that in one cup portions. It’s the perfect amount to serve with one meal’s worth of frozen tortellini when I need a quick pasta side dish.
