Taziki is honestly so easy to make. And I’m not sure why I’m just learning about this now, but if you grate a cucumber and two cloves of garlic, squeeze out as much liquid as you can and add that into a bowl with Greek yogurt, fresh dill, lemon, salt, and pepper, you’ve just made a delicious and refreshing Mediterranean spread, perfect for the summer. To pair with this, we’ll make chicken sulaki. We’ll first take our chicken and cut it into chunks. Put them on skewers and season with your favorite olive oil. I’m using sweet July here. Dried oregano, rosemary, paprika, salt, and pepper. All get massaged in. And you can put them onto a hot grill with a few lemons until you have a beautiful char just like this. After cooking for about 12 to 15 minutes, you can plate your skewers with a simple cucumber salad with feta and of course that incredible taziki. And in under 30 minutes, you’ve just made a delicious proteinpacked weekday meal. Dig in and let me know what you think.
