Homemade tater tots! Perfect Super Bowl snack, a classic, and even better homemade.

Ingredients:
– 2 russet potatoes
– 1 heaping tablespoon flour
– 1 heaping tablespoonful cornstarch
– Large pinch of salt
– 2 tsp paprika
– 2 tsp garlic powder (optional)
– 1 to 2 tablespoons butter or ghee
– Oil or fat for frying

Method:
– Peel skin from russet potatoes
– Fill a bowl with ice water
– Grate potatoes into the bowl, mix, and let sit for 15 to 30 minutes
– Strain and place potatoes in a dishcloth.
– Squeeze and twist to remove moisture
– Take a skillet and place it on the stove over medium heat, melt 1 to 3 tablespoons of butter
– Place potatoes in the pan and cook for 3 to 5 minutes, stirring frequently
– Add salt, paprika, and garlic powder (optional)
– Place back in the bowl
– When cool enough to handle, add flour and cornstarch and then mix
– Make tater tot-sized nuggets with your hands and place them on a sheet tray lined with parchment paper
– Place in the freezer for at least 30 minutes (note you can store in plastic bags for future use)
– Pre-heat oil to 350 F (176 C) in a vessel suitable for deep frying
– Remove tater tots from the freezer and begin frying in small batches
– Fry for 3 to 5 minutes until golden brown
– Sprinkle salt immediately after removing and serve
