Not many mentions on this sub about this restaurant so I thought I’d add my 2c.

Had a very unique, precise experience at Delta. Every bite was surprising and delightful. Standouts were the first “edible scallop” (perfectly cooked scallop, in between crispy potato chips) which cycled through four distinct seafood flavors for me, the second “flower” which was kind of like a pasta ravioli dish, the fourth “leaf” which was a dehydrated pear with mushroom and oyster inside, and the final “sunflower” dessert which was a mind-blowing combination of sunflower seeds, crunch, and cream (probably one of the best desserts I’ve ever had). Oh, and the bread (shaped like a mushroom) was amazing too, paired with their creamy bone marrow dip. Unfortunately the mains were all misses for me as they were a bit heavy on the richness / umami, but it’s more to do with my taste than the objective quality.

That said, the entire experience felt a bit… cold? Tables were spaced far apart, service was precise and choreographed but not exactly warm nor inviting, and honestly I left the restaurant impressed but not really with the desire to come back. Every dish was technically impressive, but besides the bread, there wasn’t a single one that I was obsessed with and wanted more of, if that makes sense. In a way, it felt like I ate a science experiment (which in all fairness was what I was expecting going in).

Either way, would definitely recommend giving this spot a shot if you’re looking for something different, as it delivers on that front and more.

    Been on my list for a while. All the pictures I see make it seem like they go really deep into the “make the dish seem like something different” presentation. I assume it was not too distracting?

    Did you leave full? Looks like a relatively small amount of little bites with no actual main courses.
