Well, I now have a new favorite chocolate cake recipe. This is so rich and so fudgy that every bite just melts in your mouth. This is my chocolate olive oil cake, and it is so easy to make. You also don’t need fancy olive oil. I’m just using Kirkland olive oil in this cake. We’re not really going for a strong olive oil flavor here. It’s really just for texture. It adds so much richness, which would otherwise probably taste kind of gross if we used all vegetable oil. While the cake is easy to make, the frosting is just as simple. Melting chocolate chips with olive oil and mixing in a little bit of sour cream and maple syrup. It makes the fudgiest, glossiest frosting. Pop however you like. I’m using pistachios.
