Lemon Cottage Cheese Bars: 9 Servings
Macros (Approximate): 1 Bar
Calories: 190 | Protein: 6.7g | Carbs: 20.0g | Fat: 10.1g | Fiber: 1.3g | Sugar: 17.1g
Ingredients:
• 1 cup cottage cheese, 210g – drained for 10 min
• 2 eggs or 3 egg whites
• 1 tsp vanilla extract, 5g
• Zest of 1 lemon (1 tbsp)
• ¼ cup fresh lemon juice, 60g
• ½ cup raw cane sugar, 100g (or any sweetener you like)
• 1 cup almond flour or oat flour, 100g (or 3/4 all purpose flour, 90g)
• 1 tsp baking powder, 4g
• ½ tsp salt, 3g
• ¼ cup white chocolate, 45g melted and cooled slightly
• 2 tbsp white chocolate chips, 28g to sprinkle on top

Directions:
1. Preheat oven to 350°F (175°C). Grease & line an 8×8-inch pan with parchment paper.
2. Melt ¼ cup of white chocolate in microwave or double boiler. Set aside to cool
3. In a blender or food processor, combine, Cottage cheese, eggs, vanilla, lemon zest, lemon juice, and sweetener. Blend until smooth and creamy.
4. Add baking powder, salt and melted white chocolate. Blend until incorporated
5. In a medium sized bowl add the almond flour and pour the lemon mixture on top. Mix until

6. Pour the batter into the pan.
7. Sprinkle the top with 2 tbsp white chocolate chips.
8. Bake for 22–28 minutes, or until the center is just set and a toothpick comes out with a few moist crumbs.
9. Let cool completely before slicing. Chill if you prefer a denser, fudgy bar.
10. They keep in the fridge up to 4 days.
