Flew in from Albuquerque for my first Texas barbecue experience.
Interstellar Friday Barbs-BQ Saturday La Barbecue Sunday (had sandwiches and forgot to take a good picture before digging in)

Interstellar is great BBQ. But it is what Austin BBQ critics call “Hippy BBQ” Meaning it does conform to traditional Texas BBQ standards. Franklin’s is a traditional Texas BBQ joint and is also very good BBQ, yet- I refuse to stand in line for 2 hours to eat good BBQ. Franklin’s is a tourist attraction.
Interstellar, though very good, does frito pie sausage, smoked duck and smoked lamb. Their forte is a 36 hour smoked pork belly. It eats like candy. Again very good, but not Texas traditional.
My place, and again it’s an individual preference about wait time, cost, atmosphere and traditional menu is-
Stiles Switch. If I must spend $100, with no wait This place is an in-between of Franklin’s and Interstellar.

im not hating on interstellar . its just funny that ive eaten at a Michelin Star restaurant (before they got it) and found a thick ‘n’ curly in my banana pudding. haven’t been back since but not because of the hair, just because. otherwise its great.

I love BBQ but man, I don’t know how people can hit 3 spots in 3 days. I’ve seen some people do 8-10 BBQ joints in a week. When I eat BBQ, I need a long nap after, salad for dinner, and about 48 hours on the couch before I can do anything. Maybe I’m just getting old.

I was just in Austin and did Interstellar and Franklin’s. The lamb at Interstellar was great and their Beef rib was delicious. I do give Franklin’s the nod on their brisket – I thought I had died and gone to heaven.

We’re stuck deciding between Barbs and La BBQ for our trip next weekend. Would you say barbs for sure?

I visit ATX yearly. I wanted to check interstellar out and was not disappointed. The beef ribs were amazing. Gouda mac and cheese was soooo good to.
La Barbecue is usually our go to.
We also tried leroy and lewis. Was ok. The brisket was dry. The beef cheeks were really good. But was let down by the brisket.
