Partnered up with my Mexican mother in law. She made the rice for us and I did my first attempt at cooking Carne Asada.
Since this was my first attempt i was debating between flank and skirt steak. Ended up trying both. For me flank turned out a lot more tender and juicy. How did i do? I was shooting for a medium-ish temp and took them off the heat at 130 degrees.
Any tips for next time or secrets to making it even better? Always open to learning how to improve my skills. I usually just grill simple stuff like ribeyes and hamburgers/hotdogs so this was fun to venture out and try something a little harder.
Long time lurker, first time poster in here so thanks in advance!

Looks good, mexican approved. Y’know carne asada is about simplicity so there’s not much you can do to make it better. Perhaps you could make some salsa tatemada and grill some spring onions. Spring onions are delicious when grilled, you can also throw an onion over the coals wrapped in aluminum foil and leave it there until it’s tender. You can also make some guacamole, just avocado, lemon, salt, and a little olive oil to prevent oxidation. If you marinated the meat then you can’t really make it much better, it’s not top quality meat so there’s only so much you can do to make it better. Quesadillas with asadero or oaxaca is also a good option. Jalapenos filled with philadelphia cream cheese and wrapped in bacon is another suggestion.
Looks great, the only thing I’d do differently is slice it thinner, but that’s just my preference. I go as thin as possible, against the grain, and at a 45 degree angle down the cutting board. Removes any chewiness that can come with skirt. Basically shaved slices is how I like it.
Looks good to me. A lot of people try to do way too much with carne asada. All you gotta do is season the beef and grill it lol. Not all this crap with tequila, modelo’s and all that other internet crap. These look great. I’d eat them. Need some salsa though
Perfect
High five! Looks delicious.
I’m shocked that little amount of prep is 1 of my favorite food in the world the taco I espcial, tacos win for favorite food n burritos and I’m white as American cheese! Nothing beats a taco or burrito.
That grill looks brand new.
You know damn well you slayed it.
Where’s the salsa and the pico? Marinate it, overnight, ideally. Looks good
asada looks good. tortillas look dry and cold
edit- that rice looks delicious too
Don’t know how you did it but it looks good. Hope it was tender as it’s a bit thick for tacos.
Here’s how I do it: marinate skirt steak w 1/2 fresh lime juice 1/2 red wine vinegar white onion and cilantro in a ziplock bag for 24-72 hours. Take out the steak and pound it flat between Saran Wrap until it’s very thin. Grill for 8-10 min turning several times. Let it rest then cut into small pieces add fresh lime juice and S & P to taste. Perfect every time 😄
Excellent my friend!
Looks Good.. I like mine a little more done, call me Weird..
And you didn’t forget the Mexican rice, solid just need some salsa 👍🏽
You forgot the shells
How long did you marinade? What kind of marinade did you do. I use skirt for carne asada, and add jalapeño. In Jalisco, at least in Guadalajara where I was they cooked it with cactus.
Bueno!
Raw tortilla?
Thank you, thank you, thank you for slicing it against the grain
So I’m wondering why I wasn’t invited for tacos? Those look amazing!
Did you warm up the tortillas on the grill?
I’m disappointed there isn’t a photo of a taco. All the parts look yummy, but I don’t see a taco.
Coming from a Mexican, your meat is not extra well done like it should be. /S
Difficult to say how well you did since you didn’t invite us for dinner to taste them. LOL! However, the steak looks perfectly cooked and the tacos looked delicious.
Taco shells
Throw some queso fresco on them and a side of lime.
If they taste as good as they look, you crushed it
Even got the paper plate, looks good hermano
Great tips 😊😊
