So I got this from the halal shop because it was cheap and seems like a large amount of cap. However it came with this bonus flap and I am not familiar with it.

What do I do with it? Stew or braise? Something else? Anyone know what it is I have got?

    Is that not the spinalis (rib cap)? Or am I confused and that’s the other side?

    Lifter meat like someone else said. Extremely chewy but really nice flavor. Your jaw will be sore by the end. That beef looks fantastic by the way

    Make some stew with some other beef. Saute onions and garlic potatoes carrots tomato paste and parsley little bit of chicken bouillon and soy sauce. Brown meat and and little bit of water and simmer for 45 minutes.
