I peeled them, cut them, steamed them, shook them around a little bit to rough them up, then roasted them on a baking paper lined roasting tray, with veg oil, salt, pepper, garlic powder, rosemary and thyme, cooked until golden.

    Try doing a pre boil with baking powder and salt in the water. The salt soaks into them to season the inside and baking powder breaks down the surface. Then extremely gently fold against each other to generate a fluffy covering. Then roast for 20 to 30 minutes depending on the size of the potato chunks. Re oil and apply herbs and whole garlic cloves. And roast for another 20 to 30 minutes.

    I’m not saying it’s a better method im just saying try it n tell me what you think.
