    Gorgeous!! I prefer to use an asian eggplant that’s just smaller and fewer seeds, but yeah i have it with some marinated chickpeas and crusty bread!

  3. IMO you might try cooking it a bit longer, or at a higher temp. A little brown on this would really amp it up.
