I may have come up with a new way to get a fire low and slow enough for jerky. Good old snake method. I know, briqiettes. I am not against briquettes. I used B&B hardwood briquettes for their mild smoke flavor. The problem with piling briquettes in a ceramic grill is ash that call clog the charcoal grate. You don't need lighter fluid to get them started. This worked well for a 4 hour low and slow smoke at 180°f tops. That's the grill stand part of the slow roller.

    Why use briquettes at all, and not just lump charcoal? It burns so much cleaner and without all the waste.
