I got this from my niece. A friend of hers breaks down whole cows and gave this to her, but she doesn't know what part of the cow it is. It would be nice to know so that I know how to cook it. Any guesses?

Hard to say but it could be the end piece of a filet?

Can you show the other side? Looks like it might be the tail end of a sirloin tip roast, but the other side will show more

Thats not 21 lbs…maybe 2.21 or something but ya thats not a damn brisket. It’s a tri tip.
How to cook: dry brine with salt, both sides and leave it fridge overnight. Cook low and slow @ 225 until 115° internal, then sear it over high heat on each side until desired temp. (I pull my sear after inside is 125/130) depending on how your guest prefer their meat.
