Just did some thighs on the Weber Smokey Joe. Hit them with some rub, and let them ride til they were finished. Pulled at 180°F. Used hickory wood because I had 1 chunk left in the bag. Normally on chicken I go fruit wood. These cooked so fast was not an issue. Served with some frozen sweet taters I added butter and syrup too and mashed. Pickle slices for 'flair'.
These little smokey joes can get going these only took 30 minutes, and the skin was perfect crisp. Used oil as the binder for the rub, I am sure that didn't hurt.
