Made two new things this week. The pancake tacos are so fun and were so easy to put together—next time I’ll probably do a few variations with different proteins and sauces. The jello cups are nice and refreshing, I made lemon, orange, strawberry and cherry. They would be great with some fresh fruit on top too.

McGriddle Tacos [protein pancakes, chicken sausage links, chipotle maple sauce, cheesy scrambled eggs (whole eggs, egg whites, cottage cheese, American cheese) – 368 calories, 32g protein]

Sweet Chili Rice Bowls [jasmine rice, riced cauliflower, grilled chicken breast, broccoli, bell pepper, onion, sweet chili sauce (sugar free chili sauce, sriracha, light mayo, Greek yogurt) – 386 calories, 43g protein]

Jello Mousse [sugar free jello mix, water, nonfat vanilla Greek yogurt, topped with fat free whipped topping – 106 calories, 8g protein]
