Just wondering what y’all’s favorite vegan side dishes are and if you could link them in the comments? I’m in a side dish phase and want to collect a bunch because sometimes I just don’t want a specific meal, I just wanna pick at things all week.

I love doing Korean banchan meal prep and then just pick and mix all day.

20 banchan is too time-consuming anyway lol. I do 10 and it takes just a few hours and it lasts me all week.
i like asparagus roasted in the oven. just a little bit of oil (and make sure they’re super dry when applying oil!!), salt pepper onion powder garlic powder.i can’t remember the temp… maybe 400? i turn them partway through and let them get some color.
roasted small potatoes are also good, red potatoes or the tiny gold ones work. cut them in half, add oil, salt pepper and rosemary (onion & garlic powder if you want), bake them til they get color. I wing the temp every time but again probably 400 or so if you’re using a big oven.
