I pulled the last big hink of last years pig out of the freezer and I have this. Only label says ropa. From what I know Ropa Viejo is made from flank steak.

    Does it really matter? Wash it, dry it, slow cook it.

    Foreshank of beef. Hindshanks have the bone more towards the middle. I am braising eight Wagyu versions right now.

  4. It’s a shank. Braise it a long time or use to make stock or Raman broth
