Came out literally perfect on the money crisp and caramelized. Dust and rubbed a couple hours before with a little garlic onion and some pereg thai sweet chili powder. 30 on one side, 30 on the other side, sauced it up with some tangy BBQ and back on for 5 minutes cranked.

There was not a piece of meat left on any bone and the pickiest of my (8!) kids, My 4-year-old daughter was jumping up and down saying "I love you so much because you made such good food This dinner was fantastic!"

I'm a brisket man myself but this was so easy and a crazy crowd pleaser. My regular wings are damn good but I think this is my method from now on. No brainer.

    Yeah man so what I did is like I said in the original post is I dusted and rubbed it about an hour or two before (but if you’re in a rush I don’t even know if it matters that much) So first I tossed the wings in some olive oil and generously seasoned. I just did a little onion powder garlic powder and some sweet Thai chili spices.

    Put the wings on your cold, non preheated smoker. Don’t even think about turning the smoker on. If you even think about turning the smoker on before you put the wings on you’re going to ruin everything. Don’t freaking do it.

    Now that the wings are on turn your smoker to 400 fire it up and set a timer for 30 minutes.

    Go have a cigar and a couple cold ones.

    Come back after 30 minutes and flip those bad boys one time and close the lid.

    Set another timer for 30 minutes. After that take em of and toss in sauce in a big old bowl. I used some sweet tangy Bbq sauce.

    Now put the wings back on for about 5 minutes or so and you’re good. Enjoy.
