What? That’s why you set you’re alarm for 2:30 AM and smash a few beers while tending to the fire, then go back to bed until 5:30 when you’ll need another beer to tend to the fire and not feel like ass…

I smoked a brisket the other day on my WSM 18 and got 14 hours from not even a full bag of B&B briquettes. The WSM is stock except I put an extra charcoal grate at the bottom rotated 90 degrees so the coals stay on the grate longer. It varied a little but ran about 225-250 F for most of the cook. Get a propane burner and charcoal chimney to light the briquettes. It’s nearly as easy as a pellet grill but you get actual BBQ flavor

This has happened to me exactly one time. From there, I always know my smoker well before trying it, use a programmable thermometer for interior and exterior temp with alarms and I always schedule one wake up check about 1/3rd of the way through the sleeping interval.
