Apparently this is inspired by a shoyu recipe from Kyoto. The flames added a delicious smoky flavour to an already spicy kara miso ramen. Wasn't a fan of sweet corn as a topping and I should have ordered some extra cha siu.

I will be in Kyoto in two weeks and am eager to find a place that does this !
I assume that was a little neutral oil with some pepper flakes, spitting hot an ignited for effect ?

I agree that the added smokiness is amazing.
