You might not believe me when I tell you these crispy Greek fries were made in the oven. And you can doctor these up with whatever you want. For me, I went with feta, dill, and minced garlic. Let me show you how to do it. I’m opting to slice these bad boys into fries and pretty thick ones, too. They need to be able to stand up to the oven. I then threw these into a pot of boiling water with a splash of vinegar and then boil these until they can be easily pierced with a knife, but not falling apart. On my preheated baking sheet, I’m adding a healthy amount of olive oil and then salt, pepper, and my potatoes. Baking at 425 for 25 minutes aside.
