Popped my Traeger cherry! Took a half day at work to cook my family dinner while my brother in law was still in town. Didn’t have a full day to do 3-2-1 ribs and I’ve been eager to fire this thing up so I went with a “quick” method I remembered seeing from Meat Church’s channel.

Pork spare ribs. I’m very partial to Kinder’s brand seasonings and rubs. Mainly used their Caramelized Onion Butter seasoning, followed by their Brown Sugar blend and finished off with a light sprinkling of their Cajun Blackened for a little extra color. Got them prepped last night.

Pulled them from the fridge today, an hour before cook and got the Traeger to 275*, using a mix of the Meat Church blend of pellets and the Traeger Hickory. Placed all the ribs and let er rip for 1:45. Got them into aluminum trays and then used some butter, brown sugar, local honey, a little bit of ACV, and finally my favorite BBQ sauce, Sweet Baby Rays. Made sure they were all good and slathered, covered with foil and back into the Traeger for another 45 minutes.

Checked temp and they were good and ready. Pulled them and let them rest for a few minutes as we got the sides arranged. A couple of salads, some mashed potatoes. And my sister in law made this killer cornbread.

Ultimately, my biggest critics will always be my family’s stomachs. I’ll say that they were all satisfied today. My father in law is in the restaurant business and he’s always complaining about food lol. Saw him make a second trip for a few more ribs and even got a “good job” out of him on his way out 😅 Overall, I’m very happy with the cooking experience as a pellet smoker noob. Even got to enjoy the pool with the kids as I didn’t have a smoke box to tend to 🙌🏽

    Dang, that ribs look awesome! Honestly never tried Kinder’s Caramelized Onion Butter but you sold me on it. Did you feel like 275 was the sweet spot for faster ribs? I always get nervous going above 250, but you make it sound super doable.
