Got a Kamado Joe as a birthday gift and gave it a go yesterday with some bone-in pork chops.
Kept it super simple: olive oil, salt, pepper, garlic powder, and a little rosemary. Let ‘em go until they hit 145°F internal. Skin came out crisp, and the meat stayed juicy. I used Typhur Sync Dual to keep an eye on temps, it's easy to use and stayed connected the whole time. Nice not having to guess or lift the lid constantly.
I'm still figuring things out, but this sub has been a goldmine. Thinking maybe reverse-seared tri-tip next. Open to suggestions if anyone’s got a favorite beginner-friendly cook!
