

Everyone had pizza last night and I avoided it all but woke up craving pizza so bad that I made this.
It went from normal 3 egg cheese omelette to breakfast time pepperoni pizza pretty easily.
3 eggs
1/4 cup of mozz in the eggs
Sharp cheddar cheese layered on bottom of pan
1 tablespoon butter
Salt and pepper
Ranch instead of red sauce
1/4 cup of mozz on top
Pepperoni
Parm
Red pepper flakes
Fry cheddar and butter on bottom of pan till it starts to get slightly crisped.
Mix eggs salt pepper mozz and pour on top of cheese thing.
Lower heat and cover so eggs kind of cook and bake a bit. Then flip and return to higher heat and fry bottom.
When eggs seem done I put down some ranch (leftover from pizza last night), mozz, pepperoni, Parm. Raised oven rack to top, Put oven to hi broil, and set frying pan just under heat with handle out, oven open.
Few minutes later walla pizza egg thing. Could do with less eggs or more do what you want

Wish there would be places that would sell keto pizza to eat-in or take away. As of now, only option seems to be making it at home. Looks good
