- 1 cup red lentils
- 1.5 cups fine bulgur (köftelik bulgur)
- 1 large onion, finely chopped
- 3 tbsp olive oil
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp red pepper flakes (adjust to taste)
- Salt and black pepper
- 1 bunch of parsley, finely chopped
- 4-5 green onions, chopped
- Juice of 1 lemon
- Fresh lettuce leaves for serving
Instructions:
- Cook Lentils: Boil the red lentils with 2.5 cups of water until soft.
- Add Bulgur: Remove from heat, stir in the fine bulgur, cover, and let it sit for 15 minutes.
- Sauté Onions: In a pan, heat olive oil and sauté the onions until soft. Add tomato paste and cook for 2-3 minutes.
- Mix Everything: Combine the lentil mixture with sautéed onions, spices, parsley, green onions, and lemon juice. Mix well.
- Shape Patties: Let the mixture cool slightly, then shape it into small, oval patties using your hands.
- Serve: Arrange the patties on a plate with lettuce leaves and lemon wedges.
