Whilst the wife slept, I smoked. 4lb. brisket portion, salt and pepper only. 2 x 1 snake with hickory chunks at 250ish 5 hours to 165 IT.
Wrapped in butcher paper and finished in the oven at 250 to 205 IT. Rested 3 hours in the cooler till I sliced it.

Was it juicy and tender? Might have had a better cook if you could trim some of that excess fat off, but in the end if you and your wife enjoyed it that’s all that really matters! Outside color looks good
that looks nice! Before I read the description and only saw the picture, I thought it was tri tip!
