For anyone who still cares I figured l'd post this update because the result is better.

One of the comments on my previous post asked if l'd tried boiling the bagels (as is traditional) and I hadn't done that. So I tried it!

METHOD:

Put a pot of 6 cups of water on the stove with 1 TBS Barley Malt Syrup (available at any Whole Foods or local co-op or order it…it's cheap). Bring to a boil and reduce to a simmer.

Meanwhile, shape your bagels. Drop into simmering liquid for 3-4 minutes.
Remove to a lined baking sheet, brush with egg and bake at 375 for 35-45 minutes.

A lot of people prefer the Greek Yogurt version of this recipe. That’s amazing, they’re both great. But I encourage you to try the boil before cook method on whichever you prefer. It adds a great crust.
